My roommate asked I post this for them.

Recently I've seen everyone making Ina Garten's brownie pudding and it looks so good! The only issue is that it calls for 4 eggs + recipe produces a lot and that felt like too much. I tried seeing if anyone else had made a vegan ver but no luck.

I experimented with a recipe (not a vegan one) from Eleanor Wilkinson.

Here's what I changed to make it vegan:

Instead of half a chicken egg, use 2 hefty tablespoons of Just Egg. Sub vegan butter for real butter. I've had issues with my vegan butter exploding in the microwave even in 30 second bursts so i heat it slowly over a metal bowl on stove stop. I used about 1.5 tbsp vegan butter melted.

FYI: This will not work for other vegan egg substitutes like a flax seed egg or apple sauce unfortunately. Sorry if you don't have Just Egg available, i can't think of an alternative!

Just Egg won't whip up like chicken egg so just mix it with the sugar as usual. (I tried an electric whisk and it still didn't lighten).

As recipe says, bake in a water bath. I baked mine for 30 minutes and some parts were more set up than the bottom. If you don't like it as runny I'd say leave it for 5 more minutes.

Dust with powdered sugar and add vegan ice cream and it's a delish single serving treat 🙂 this is optional step of course lol
