I’ve worked in a restaurant. My job, at every spare moment, was to fold-seal little paper bags filled with goodies precisely this way. I’ve likely made thousands of these folds, if not tens of thousands. 50x4/7x365x4, if I had to guess. I’ve attempted this with chip bags dozens of times and never managed it. This method is a little bit different than what I use, this one folds the corner in before rolling down the bag, What I do, even in my chips bag, I roll it down, then fold the corners in, then roll it out once over the folded corners. Maybe that would be easier for you to do to this kind of bags?
I still just can’t manage it. One side slips and the other crumbles because of the lack of tension! I’m certain that it’s possible, but I’m giving up once again.

I prefer the chaotic evil version of this where I twist the open end three or four times around and then set it upside down on top of itself so it stays twisted.
Or keep more clips around, and if that's not an option, roll it up and store it rolled side down. I've never once done this technique and have also never ended up with a stale bag of chips that I didn't just leave out.
It's a neat little thing, but a solution to a problem that doesn't exist. It's like when a hotel folds towels into animals for you.
